Meal Prep Monday: Chicken

Meal Prep Monday: Chicken

Ingredients: 

Chicken Breasts - I typically prep 2-3 lbs., but you can do as little or as much as you would like 

Extra Virgin Olive Oil   

Kosher salt      

Black pepper

Garlic Powder

Tajin Season (or seasoning of your choice)

 

Directions:

1.     Place a large skillet on medium heat and drizzle with olive oil and preheat oven to 400 degrees.  

2.     While the skillet is heating, you’ll prep your chicken breasts.           

3.     Spray each chicken breast with avocado or olive oil on both sides.  

4.     Season both sides with kosher salt, black pepper, garlic powder, and Tajin seasoning (or seasoning of your choice).       

5.     Transfer seasoned chicken breasts to skill and cook on each side for 3-4 minutes over medium heat.      

6.     Transfer to baking sheet lined with parchment paper and pour remaining olive oil and seasoning over the chicken.       

7.     Bake in oven for 25 minutes or until the internal temperature is 165 degrees. 

Note: I love adding these chicken breasts to salads for the week, pairing with rice or quinoa, or using in easy lettuce wraps.
